Beef grading is highly based off intramuscular fat, which is called marbling. Marbling affects meat's juiciness, tenderness, texture, and flavor - attributes that determine "eating experience." In this case, more of all the above is the most desirable.

USDA Prime

  • Less than 2% of US cattle are graded USDA Prime
  • Usually reserved for resturants

  • Great Quality
  • Most frequently produced out of our herd
  • Found mostly in grocery stores

USDA Select

  • Good Quality
  • Leaner muscled meats
  • Used to make leaner Salmon's Meat Products

Ebert Grown is a fresh beef option that is from the farm of Randy and Renee Ebert, and family of businesses collaboration to complete the circle of life. The Ebert family, seventh generation farmers located in Algoma, WI, are passionately devoted to connecting the farm-to-fork concept, providing customer assurance with locally sourced food.

Where is Ebert Grown from?

Ebert Grown cattle are born, harmoniously raised, and humanely harvested on the 1868 homestead of the Ebert family which is located on the rich soil lands of Kewaunee County, Wisconsin.

What is the difference between Ebert Grown and other beef sold in stores?

We believe the difference is in the story and product itself.
